For the dough
1/2 cup butter
1/4 cup sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
1/4 teaspoon salt
For the topping
2 beaten eggs
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/4 cup flour
1/4 teaspoon salt
1 teaspoon vanilla
Dough directions:
Cream the butter and sugar until well blended.
Beat in the egg and vanilla until well blended. Mix the flour and salt in a separate bowl and then add in three parts to the
butter mixture, blending well. Place the dough evenly in a
greased 8 x 8 pan. Bake for 15 minutes at 350F. Cool slightly before spreading
topping.
Topping:
Mix all ingredients together and then spread on top of the dough. Bake at 350F for 25 minutes.
