Lunch-Crab Salad et. al.

crab salad on 2 crustless white bread

kale chips blended with the remaining M80 butter (M80 is a local restaurant)

licked my left finger

a small glass of cranberry pomegranate juice. 

Put sandwich on med plate on breakfast's placemat along with cpj. Enjoyed lunch.

This lunch can be served to a medium group depending on how much crab salad and bread you have available.

Blue Cheese and Black Olive Spread

1/2 cup crumbled blue cheese
1/2 cup sliced black olives
1 clove garlic, peeled and smashed
1/4 cup olive oil

Place blue cheese, olives, and garlic in a food processor bowl. With the food processor running, drizzle the olive oil into the feeding tube and run until smooth. Empty the spread into a small bowl, cover with plastic wrap, and refrigerate until ready to use. Spread onto slices of baguette or crackers. It pairs nicely with a glass of apple cider.

Turkey Roll Up Appetizers

8 ounces cream cheese or yogurt cheese
1 cup cranberry chutney or whole-berry cranberry sauce
8 (10-inch) flour tortillas or 8 (10-inch) square lavash flatbread
32 thin slices of deli turkey

Lay one tortilla flat on a cutting board and spread a thin layer of cream cheese all the way to the edges, covering the tortilla completely.

Lay 4 slices of turkey overlapping each slice evenly across the bottom half of the tortilla.

Spread the two tablespoons cranberry chutney horizontally across the middle of the tortilla.

Starting at the bottom end of the tortilla, roll tightly toward the cranberry chutney; continue rolling until the filling is tightly wrapped and the cream cheese holds the rollup together. Repeat with the remaining tortillas. Wrap tortillas in plastic wrap and chill until serving time.

To serve: if using tortillas trim any unfilled ends away and then slice it into 8 equal pieces, if using square lavash flatbread there is no need to trim the ends.

Make ahead: Assemble the rollups up to 24 hours in advance. Slice when ready to serve.
