3 tablespoons butter
1 cup packed brown sugar
1 egg
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 cup sliced almonds
In a large bowl, beat butter and brown sugar until crumbly. Beat in egg and vanilla and almond flavoring.
Combine the flour, baking soda, and cinnamon; gradually add to the butter mixture and mix well. Shape into 2 6 inch rolls; wrap each in plastic wrap. Refrigerate overnight.
Unwrap; cut into 1/4 inch slices. Place on greased baking sheets. Sprinkle with sliced almonds. Press almonds in lightly on top of cookie.
Bake 350 degrees for 7-10 minutes until lightly brown. Cool for 2-3 minutes before removing to wire racks. Makes about 4 1/2 dozen cookies.
