1 tablespoon vegetable oil
1/2 large sweet onion, like Walla Walla, or Vidalia, chopped
2 green onions, finely chopped
1 cup low-fat plain yogurt,
1 cup low-fat cottage cheese
1/2 teaspoon salt
1/4 cup fresh chives, finely chopped
In a large skillet, add oil and heat over medium-low heat. When the oil is hot, add the onion and cook for 10 minutes, stirring occasionally, until the onions start to turn golden. Add the green onion and stir occasionally for 3 to 4 minutes. Remove from heat and let cool.
In a food processor, add the yogurt, cottage cheese, and salt, and process until well combined. When the onion mixture has cooled, add it also to the food processor and mix until well combined. Transfer the food processor mixture to a bowl and add the chives. Mix well and chill until ready to serve.
Goes well with a veggie tray, crackers, or chips.
